The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 6/11/2020. As a result of that inspection, and due to the severity of the specific violations the Shogun Japanese Seafood Steakhouse was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 9 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Food utensils on cook line observed stored in a container of water which is not maintained at 135°F. (Under 135°F is a risk for bacteria growth)
  • Blade of can opener, a food contact surface, was observed to have old food residue and was not clean to sight and touch.
  • Interior surfaces of microwave, a food contact surface, was observed to have old food residue and was not clean to sight and touch.
  • Paper towel dispenser empty at the handwash sink in the food prep area.
  • Soap was not available at the handwash sink in the food prep area.
  • Observed no chemical sanitizer being used on equipment and utensils after washing and rinsing them, and prior to use.
  • Old food residue observed in the handwash sink, indicating uses other than handwashing.
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Food employee observed in food prep area prepping salad wearing bracelets on arm.
  • A food employee was observed prepping salad – a ready to eat food – with bare hands.
