The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on DATE. As a result of that inspection, and due to the severity of the specific violations the NAME was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of XX violations were found.

The inspector made the following comments in support of the violations found during the inspection:

• Ham and cheese in cold wells are >41F. Pans are over-filled and lid left open. Lid closed and on re-check temperatures have decreased. Corrected. REPEAT VIOLATION (9-10-20)
• Pancake batter left out at room temperature at 61F. Batter discarded.
• Uncapped bottle of detergent and bottle of bleach stored on sink drain above cooked chicken in sink. Chemicals removed. Corrected.
• The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
• Raw chicken was stored above margarine cups in walk-in cooler. Corrected.
• Interior of line cooler has debris.
• Top of dish machine has dried on food debris.
• Sides of fryers and sides/front of grill have excessive grease build up.
• Two indoor trash receptacles have excessive build up on exteriors and handles.
• Interior of 2 microwaves, a food contact surface, was observed to have food residue and was not clean to sight and touch. Cleaned on site.
• The food facility does not have the original certificate for the certified food employee posted in public view. REPEAT VIOLATION (9-10-20)
• Floors in grill/fryer area have excessive grease/debris build up. Floors along baseboards/under shelving have build up.
