Sterling Pig in West Chester slapped for 15 violations; apron stored on top of uncovered rolls, food handler not washing hands in between separate tasks

The Chester County Health Department conducted an unannounced retail food inspection on 2/26/2020. As a result of that inspection, and due to the severity of the specific violations the Sterling Pig was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 15 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

    • Case of raw chicken stored in basement on food prep table tempted at 48 degrees F. Ensure proper cold hold temp of 41 degrees F or below throughout food prep process and storage.
    • Absorbent cloths used to line counter under cutting board, and lining shelf in bain marie. Ensure surface is smooth,non porous and easily cleanable.
    • Several used knives stored on knife holder in kitchen. Clean and sanitize in between uses. Debris on table-top can opener blade in basement food prep room. Clean and sanitize in between uses.
    • Hand wash sink in ware wash room blocked by equipment and filled with unclean broom heads. Clean and sanitize sink immediately, utilize for designated purpose only.
    • Chemical spray bottles stored hanging on hand wash sink in basement and on ice bin with food behind main bar. Keep all chemicals in a separate designated area
    • 2-lights out above cooks line. Replace.
    • Common food labels lacking on several bulk dry good containers in kitchen. Provide.
    • Food utensils in kitchen area observed stored in two containers of sanitizer water which is not maintained at 135°F.
    • Containers without handles used as scoops in bulk dry good containers. Use food grade scoops with a handle. Food and single use items stored on floor in walk in cooler and dry storage areas. Store 6″ off floor.
    • Employee apron(Black) stored on top of uncovered rolls in basement food prep area. Remove immediately.
    • Food facility does not have available sanitizer test strips or test kit to determine appropriate Cl sanitizer concentration at ware wash machine in kitchen. Provide immediately.
    • Food handler not washing hands in between separate tasks. EHS stressed the importance of proper hand washing and food handling.
    • Used single use gloves stored on food prep table with food in basement food prep area. Discard once used.
    • Food like debris on interior of 2-door cooler in wait station. Hand wash sinks throughout unclean with food like debris. Clean and sanitize, utilize for designated purpose only.
    • Basement walk in cooler, and walk in freezer floor under storage shelves unclean.
