Subway in Cecil fouls inspection; 4 violations, slight accumulation of black substance on the deflector of the ice machine

The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 6/8/2020. As a result of that inspection, and due to the severity of the specific violations Subway was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of XX violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Ambient temperature of the under counter fridge near the prep area was 52*F. The internal temperature of roast beef, shaved beef, and shredded mozzarella cheese was 49*F. Items were discarded. Unit may not be used until it is serviced and operational. PIC must ensure they are actively monitoring temperatures as directed in the change to the 2017 FDA Food Code. Thermometer was field calibrated as witnessed by the PIC.
  • Observed an accumulation of dust on the vent covers in the walk-in closet and are in need of cleaning.
  • Observed a slight accumulation of black substance on the deflector of the ice machine. Machine was turned off and placed out of order until the machine is cleaned and sanitized.+
  • Wet wiping cloths were stored in a sanitizing solution but there was no measurable QAT in the bucket. Solution was changed and the concentration of the QAT was 400ppm.
