The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 8/17/2020. As a result of that inspection, and due to the severity of the specific violations the Uma Japanese Hibachi Steak House was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 10 violations were found.

The marks the third straight, “Out of Compliance” inspection for the restaurant according to state records:

The inspector made the following comments in support of the violations found during the inspection:

  • Food facility is missing hood filters located under main grill line hood.
  • Observed personal medications stored inside Bain-Marie cooling unit and on stainless-steel preparation table located nearest to 2-door cooler. *Corrected*
  • Observed raw chicken stored above ready to eat foods located inside Bain-Marie cooling unit. Also observed raw chicken stored above raw scallops located inside walk-in cooler. *Corrected*
  • Observed the bottom surfaces of containers of prepared salads being stored directly on top of and in direct contact with lettuce, a ready to eat food. *Corrected*
  • Chlorine chemical sanitizer residual in the final sanitizer rinse cycle of the low temperature dish was unit was 0 ppm, and not 50-100 ppm as required. A large box was observed being stored directly on top of bulk sanitizer dispense container, which was pinching the supply line. Box was removed, line was primed, and tested/verified to be 100 ppm. Bulk detergent container was observed to be empty during time of inspection. Container was replaced and re-primed during time of inspection. *Corrected*

  • Facility did not have on hand chlorine test strips used to determine adequate sanitizer concentrations.
  • Observed approximately 15 large rodent-like droppings located on storage shelf on small outdoor dry ingredient storage alcove.
  • The Person in Charge did not demonstrate adequate knowledge of the PA Food Code as evident by the violations observed in this inspection report.
  • The following surfaces are not cleaned at adequate frequency to preclude soil/food accumulations: Grill line floors/equipment and surfaces on grill line hand wash sink.
