The Chester County Health Department conducted an unannounced retail food inspection on 6/17/2020. As a result of that inspection, and due to the severity of the specific violations the Zwei Asian Cuisine and Sushi Bar was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 6 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Observed multiple food products throughout the facility being kept in refrigeration without a covering. Ensure that all food products are covered when not in use to prevent contamination. Comply today and everyday.
  • Boxes of food products were observed being stored directly on the floor of the walk in refrigerator and freezer. Ensure that all food products are at least 6 inches above the ground at all times. Comply today and everyday. Observed meat and other food products being stored in plastic grocery/to-go bags in the walk- in freezer. Remove products from grocery bags and ensure all food products are stored in food grade containers. Do not use plastic grocery/to-go bags for food storage. Comply today and every day.
  • Food Facility Person in Charge not able to produce records showing that raw or partially cooked ready to eat fish has been frozen by the facility or approved supplier as required, before use or sale. Provide documentation for Parasite Destruction within 48 HOURS.
  • Observed prepared and opened food products in the walk-in cooler and reach-in coolers (main cook line, sushi prep) with no date marking. Label and date ALL foods that will be stored for >24 hrs with the date of make or the date to discard. After preparation and/or opening, food may stay in the refrigerator for seven (7) days with the day of prep counting as the first day. Begin good practice immediately. This is a repeat violation from last year and the previous year.
  • Observed the exit door in disrepair, door has multiple holes in screen and gap along bottom section. Repair door so that it is sealed and does not allow the entry of possible insects and rodents.
  • Observed a build up of debris along plastic guard on ice maker. Clean within 24 HOURS and maintain cleanliness.
