The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 2/27/2020. As a result of that inspection, and due to the severity of the specific violations Palumbo’s Pizza II was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 12 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- Sauce prepared from food ingredients held at ambient temperature was not cooled to 41°F within 4 hours as required. Ice bath used for immediate corrective action for sauce being cooled in large covered stock pot made this AM.
- Observed bane marie, in cook line prep area, with an accumulation of old food residue and debris on non-food contact surfaces.
- Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the walk-in cooler, is not being date marked.
- Plumbing system not maintained in good repair – observed faucet leaking at the manual ware wash sink.
- Observed build up of static dust on fan guard covers and condenser unit in walk-in cooler. (falling dust has potential to contaminate food and food contact surfaces)
- Observed build up of static dust in air return vent above ice cream dipping station.
- Observed build up of static dust and grease on interior hood ventilation system and oven walls above ovens and fryer.
- The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
- Several ready to eat foods in the walk-in cooler area stored open with no covering.
- Food utensils in ice cream scooping area observed stored in a container of water which is not maintained at 135°F.
- Ceiling tiles observed water damaged in need of replacement in kitchen food prep area.
- The quaternary ammonia concentration in the sanitizing solution of the 3-bay ware wash sink was 0 ppm, rather than 200 ppm as stated on the manufacturers use directions. Chlorine sanitizer employed for use in manual ware wash sink for immediate corrective action.
- Observed sauce being cooled in large stock pots in walk-in cooler, which is not a proper cooling method.
