16 violations for Allentown’s Parma Pizza; No soap at hand sink, no toilet tissue in men’s room, soda machine nozzles have food residue

The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on January 14, 2020. As a result of that inspection, and due to the severity of the specific violations the Parma Pizza was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 16 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Deeply scored cutting boards not resurfaced or discarded as required at the bain marie.
  • The following areas of the food facility are extremely dirty, dusty, and in need of cleaning: -ceiling vents throughout the facility -grease hoods of the stoves and fryers -floors of the back storage area under equipment and storage shelving.
  • Plumbing of the hand washing sink at the 3-bay manual ware-washing sink in the back storage area of the facility is loose fitting and separating from the wall; in need of proper repair.
  • Various frozen foods, in the walk-in freezer area, are a packaged food possibly subject to water entry and is stored or displayed in direct contact with ice. Discussed moving product away with PIC and voluntary disposal of contaminated product.
  • Various products such as Calzones, Stromboli and specialty pizza being staged at ambient temperature. The firm has no log or other documentation to confirm hold time of not > 4 hours. Discussed with PIC. REPEAT VIOLATION FROM 2015, 2017, AND 2018.
  • Food facility does not have available sanitizer test strips to determine appropriate sanitizer concentration. REPEAT VIOLATION FROM 2014 AND 2015.
  • Loose or broken door hinges observed on both the walk-in cooler and walk-in freezer being repaired with various duct tapes; in need of proper repair.
  • Soda machine nozzles, a food contact surface, was observed to have food residue and was not clean to sight and touch. Corrected.
  • Soap was not available at the hand wash sink in the ware washing area. Corrected.
  • Paper towel dispenser empty at the hand wash sink in the men’s bathroom area and the ware-washing area. Corrected.
  • Ceiling tiles missing in the kitchen pizza holding area and in the back dough mixing, and need replaced. PIC noted work order has been placed for repair.
  • Food employees observed in kitchen area, not wearing proper hair restraints, such as nets, hats, or beard covers. Corrected.
  • Prepackaged cookies in the POS area, is not labeled with the common name of the food or ingredients/allergen information. Discussed solution with PIC.
  • Food contact surface of wooden pizza paddle is not smooth, easily cleanable and/or resistant to pitting, cracking or scratching and is being repaired with various duct tapes and masking tapes. Replacement suggested.
  • The hand wash sinks located in the men’s and women’s bathrooms area do not have water at a temperature of at least 100°F.
  • Toilet tissue is not provided at each toilet in the men’s bathroom.
