The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 9/1/2020. As a result of that inspection, and due to the severity of the specific violations Luciani’s Brick Oven Pizza was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 16 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Expired food operational license posted. Facility posted current license during inspection.

  • Expired CFSM certificate posted. Facility posted current CFSM certificate during inspection.

  • Facility is lacking a written vomit/fecal incident procedure at time of inspection. Sample document emailed during inspection.

  • (3 times repeat violation)Paper towels lacking at front pizza area hand sink. Failure to correct and maintain multiple repeat violations may result in further legal actions.

  • Dented can of tomato sauce found in basement storage area.

  • Raw chicken stored above ready to eat foods in 2 door tall sliding door refrigerator.

  • (2 times repeat violation) No discard date markings on facility prepared and opened foods. Facility using prep dates only. Use by date markings, no more than 7 days after opening or preparing foods, are required on ready-to-eat foods or prepared foods, held at the establishment for more than 24 hours and stored under refrigeration. Date marking regulations emailed during inspection. Failure to correct and maintain multiple repeat violations may result in further legal actions.

  • Pizza stored without temperature control during service lacking proper time temperature log. Facility instructed on proper log use during inspection.

  • Sticky fly strip hanging from ceiling next to food prep sink in back prep room.

  • Food handler lacking hair restraint.

  • Plastic condiment cups without handles stored in spices in back prep area.

  • Pizza trays stored behind faucet of 3 compartment sink.

  • Pizza trays above pizza oven stored on absorbent soiled cardboard materials.

  • (4 times repeat violation)Two chest freezers in basement storage area observed rusting with damage to gaskets and lids with damage to units around gasket areas. Failure to correct and maintain multiple repeat violations may result in further legal actions.

  • (2 times repeat violation)Two of the basement chest freezers observed with black mold-like residue and rusting on interior/exterior and gaskets of units. Failure to correct and maintain multiple repeat violations may result in further legal actions.

  • Outside dumpsters stored on grass and dirt surface.
