18 violations at Hunan House in Albrightsville; 20-25 rodent droppings around hand wash sink in kitchen area, use of the food facility as living or sleeping quarters

The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 1/11/2021. As a result of that inspection, and due to the severity of the specific violations the Hunan House was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 18 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Observed bedding under the front counter in the food facility, indicating use of the food facility as living or sleeping quarters.
  • Shelf under food prep table with cardboard used as a liner which has build up of old food residue.
  • Handles of freezers with build up of old food residue and were not clean to sight and touch.
  • Interior and exterior surfaces of bane marie with an accumulation of old food residue.
  • Trash receptacles used inside the food facility extremely soiled, dirty, and sticky.
  • Soap was not available at the handwash sink.
  • Food Employee observed changing tasks that may have contaminated hands without a proper handwash in-between. Reviewed importance of glove use and handwashing.
  • A food employee was observed touching fried chicken, a ready to eat food, with bare hands. Reviewed importance of glove use and handwashing.
  • Soup was held in hot hold unit at 65°F, rather than 135°F or above as required. Soup was voluntarily discarded at the time of this inspection.
  • The handwash sink was blocked by cardboard and not accessible at all times for employee use.
  • Old food residue observed in the handwash sink, indicating uses other than handwashing.
  • Wall above ware washing area of the food facility is dirty and in need of more frequent cleaning.
  • Open and exposed flour used for coating raw chicken stored in pan directly under a ladder in the dry storage and hot water heater room which is subject to potential contamination. Flour was disposed of at the time of this inspection.
  • Large bowl of fried chicken next to the microwave with a case of plastic bags stored on top of chicken. Chicken was disposed of at the time of this inspection.
  • Several items in the walk-in cooler being covered with plastic wrap taken from the storage containers of miscellaneous items.
  • Chicken and beef observed thawing at room temperature on the prep table and in the sink, which is not an approved thawing method. Reviewed proper thawing methods.
  • Observed fried chicken cooling at room temperature on the prep table, which is not a proper cooling method. Reviewed proper methods with PIC.
  • Interior surfaces of bain marie, food contact surfaces, observed to have build up of old food residue and were not clean to sight and touch.
  • Paper towel dispenser empty at the handwash sink.
  • Observed 20-25 rodent droppings around handwash sink in kitchen area.
  • Observed 15-20 rodent droppings in the dry storage and hot water heater room.
  • Several raw animal foods were stored above ready to eat foods in the walk-in cooler.
  • Food in the walk-in cooler stored open with no covering.
  • Common bowls being used as scoops in bulk sugar and flour ingredients.
