18 violations at Palermo Pizza Phoenixville; Food handlers not washing hands in between separate tasks, Heavy debris build up on table-top can opener blade

The Chester County Health Department conducted an unannounced retail food inspection on 8/20/2020. As a result of that inspection, and due to the severity of the specific violations Palermo Pizza was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 18 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Observed wet wiping cloths throughout, not being stored in sanitizer solution.
  • Lunch meats lacking common food labels and date info. Provide.
  • Shelves throughout facility cluttered and unorganized throughout facility. Closet in rear hallway near back exit door unorganized. Clean and organize all areas effected.
  • Food employees observed throughout, not wearing proper hair restraints, such as nets, hats, or beard covers. * Personal items and jackets stored near food throughout. Move to a designated area.
  • Bulk food containers lacking common food labels. * Open bags of bulk dry goods stored on shelf. Once open store in a food grade sealed container with proper labels.
  • Several unclean knives stored under slicer. Clean and store in a designated area.
  • Food stored on floor in walk in cooler. Keep 6″ off floor.
  • Soiled cardboard on shelves throughout. Remove, ensure surface is smooth, non-porous and easily cleanable.
  • Light shield lacking in back food prep room. Replace.
  • Food handlers not washing hands in between separate tasks. EHS stressed the importance of proper hand washing and food handling.
  • The following needing further cleaning and sanitizing: Shelves throughout facility. * Ceiling vent cover above ice machine, and back hallway. * Wire shelves above 3 bay sink. * Bain marie door gaskets. * Bulk dry good container lids.
  • Steel panel on rear exit door damages. Replace immediately. *Opening observed at base of exit door. Repair to a tight seal. Self-closing rear door mechanism not properly working. repair.
  • Floors under equipment throughout and walk in cooler shelves unclean.
  • Matches observed sitting on top of soda boxes in service area. Keep in a separate designated area. Organize soda box beverage station area.
  • Provide a daily time log for assorted pizzas made on a daily basis.
  • Heavy debris build up on table-top can opener blade. Clean and sanitize in between uses. * Staining on several portable cutting boards. Replace when sanitizing does not remove stains. * Several food prep surfaces in back prep room unclean. * Slicer undercarriage unclean. * Interior of microwave unclean.
  • Men’s room unclean.
  • Chemicals stored on shelves with food and closets with single use items and equipment throughout facility. Keep ALL chemicals in separate designated areas.
