The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 9/4/2020. As a result of that inspection, and due to the severity of the specific violations Philly’s Phamous Steaks and Hoagies was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 18 violations were found.

The inspector noted in the report:

The Ambler Township Fire Marshal was contacted during inspection due to facility ANSUL fire suppression system not being tested since 2015 and grease hood system above cook’s line was due for a professional cleaning as of 5/23/20.

Additionally, according to reporting by The Philadelphia Inquirer the restaurant was found, “Out of Compliance” at seven earlier inspections going back to October 2017:

  • Oct 24, 2017- 13 violations and 6 food borne illness risk factor violations.
  • Oct 25, 2017- follow-up inspection finds ZERO violations.
  • Apr 24, 2018- 15 violations including 5 food borne illness risk factor violations.
  • Dec 21, 2018- 16 violations including 3 food borne illness risk factor violations.
  • May 13, 2019- 28 violations including 11 food borne illness risk factor violations.
  • May 17, 2019- follow-up inspection finds ZERO violations.
  • Oct 24, 2019- 29 violations including 13 violations.
  • Nov 13, 2019- re-inspection finds 2 violations including 1 food borne illness risk factor violations.

The inspector made the following comments in support of the violations found during the inspection:

  • (3 times repeat violation)No sign or placard of notifying customers of establishment inspection report being available upon request. Facility emailed sign during inspection. Failure to correct and maintain multiple repeat violations may result in legal actions.
  • Employee beverage containers stored in refrigeration units throughout facility.
  • (2 times repeat violation)Hand sink basin in back prep area obstructed by utensils. Failure to correct and maintain multiple repeat violations may result in legal actions.
  • Lettuce in 1 door tall refrigerator in back prep area found with mold-like growth. Facility voluntarily discarded during inspection.
  • Raw ground beef stored above dough and ready to eat foods in 2 door tall sliding glass refrigerator.
  • Foods in back prep area prep refrigerator and 1 door tall refrigerator recorded with internal temperatures of 49F-55F. Facility voluntarily discarded pepperoni, ricotta cheese, pizza sauce, garlic in oil, blue cheese dressing, and cut lettuce during inspection.
  • (3 times repeat violation) Prepared and opened TCS foods in refrigeration units lacking date marking. All TCS/RTE foods held longer than 24hrs under refrigeration must be marked by discard date. Foods from a commercial processor lacking open dates, on sliced lunch meats, open lunch meat loaves lacking open and discard dates. Date marking regulations emailed to facility during inspection. Failure to correct and maintain multiple repeat violations may result in legal actions.
  • Facility storing french fries on cook’s line at room temperature without proper time temperature log use. Facility was instructed on proper 4 hour time temperature log procedures during inspection.
  • (2 times repeat violation)Chlorine sanitizer bucket tested below 50-100ppm required concentration. Facility remixed a 50ppm solution during inspection. Failure to correct and maintain multiple repeat violations may result in legal actions.
  • Prep refrigerator in back prep area recorded with ambient temperature of 52F. Facility voluntarily discarded all TCS foods. Facility must immediately stop using the unit. Facility may not use the unit until serviced by licensed professional, AND unit is operating at 41F or below, AND written permission is granted by MCOPH. Send service report to the email provided. Failure to comply or await permission before using unit may lead to legal action.
  • 1 door tall refrigerator in back prep area recorded with ambient temperature of 55F. Facility voluntarily discarded all TCS foods. Facility must immediately stop using the unit. Facility may not use the unit until serviced by licensed professional, AND unit is operating at 41F or below, AND written permission is granted by MCOPH. Send service report to the email provided. Failure to comply or await permission before using unit may lead to legal action.
  • Rodent-like droppings observed on shelving and on floor in back prep area past 3 compartment sink. Facility must clean and sanitize area and have a licensed pest control service. Send pest control report to email provided within 10 business days. Pest Control report must state treatment of target pest.
  • Several food containers in refrigeration units lined with absorbent paper towels.
  • Scoop lacking handle stored in cheese in cook’s line prep refrigerator top portion.
  • Shelving in front area left of cook’s line observed with shelving and trays lined with absorbent paper and cloth materials.
  • Grease hoods above cook’s line observed with grease accumulation.
  • (2 times repeat violation) Some floor tiles in back prep area missing by rear door/oven. Failure to correct and maintain multiple repeat violations may result in legal actions.
  • Dust accumulation observed on wall/ceiling/soffit area along cook’s line.
