18 violations for Canton at the King of Prussia Mall; Numerous foods below safe temperature, Egg rolls stored in cardboard boxes, Food uncovered throughout

The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 8/26/2020. As a result of that inspection, and due to the severity of the specific violations Canton at the King of Prussia Mall was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 18 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Raw shrimp stored above ready-to-eat foods in 2-door cooler.

  • Can opener blade unclean.

  • Food not properly reheated to 165F for hot holding purposes.

  • Numerous items at steam table at front counter observed with internal temperatures below 135F. All items removed to stove for rapid reheating.

  • Minced garlic in oil observed at room temperature at cooks line lacking time log.

  • 4 times repeat violation: Numerous trays of chicken observed cooling outside of refrigeration in kitchen area in wire racks. Failure to correct and maintain violation may result in legal action, including closure.

  • Common name label lacking on squeeze bottles at cooks line.

  • 2 times repeat violation: Food stored in colanders and wire racks throughout refrigeration units.

  • Food uncovered throughout refrigeration units.

  • Cooking oil stored on floor in kitchen.

  • Employee mobile phones observed among food contact items.

  • Wet wiping cloths not stored in a sanitizing solution.

  • Cardboard shelf liner observed in 2-door cooler.

  • Egg rolls stored in cardboard boxes in 3-door cooler.

  • Facility using porous wood shelves to store single service containers in kitchen. Facility using raw wood blocks as shelf brackets in multiple refrigerated units. All wood in facility must be smooth, continuous, non-porous, and easily cleanable.

  •  Faucet of hand sink in kitchen damaged. Water sprays outside of sink when faucet turned on.

  • Paint peeling from ceiling tiles above food prep table in kitchen.

  • Dust build-up on ceiling vent above food prep table in kitchen.
