19 violations; The Hofbrau in Canonsburg fouls inspection, Houseflies in dining, basement, and kitchen areas

The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 7/6/2020. As a result of that inspection, and due to the severity of the specific violations The Hofbrau was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 19 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Two-pound package of raw ground beef was held at 49°F, in the 2-door reach-in cooler behind the bar, rather than 41°F or below as required. Ground beef will be taken home for personal use. Letter provided as evidence that beef will not be used for customers. Thermometer was field calibrated as witnessed by owner.
  • Carpets being used as a floor coverings in bar area.
  • Old unused equipment stored in basement area, should be removed from food facility.
  • The handle is missing on the Coca-Cola cooler and duct tape on the broken mount is being used as a handle.
  • Observed doors of 2-door reach-in cooler behind bar area, and door of Coca-Cola cooler in basement area, with an accumulation of black, mold-like residue.
  • Observed single-service, single-use articles stored in walk-in cooler (now used only for dry storage) directly on the floor, and not 6 inches above the floor.
  • No sign or poster posted at the handwash sink in the kitchen and basement ware washing area to remind food employees to wash their hands. Facility is using a two bowl sink in both areas but has not designated which sink is the hand sink.
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • The 3-bowl sink in the basement is not adequately sealed to the wall. Additionally, there is a large, unsealed gap between this 3-bowl sink and the table on which it is mounted.
  • Facility is using a two bowl sink in the kitchen to wash dishes rather than the 3 bowl sink in the basement. Facility doesn’t have drain stops for the three bowl sink.
  • Lights are not shielded or shatterproof in the main kitchen and basement areas.
  • Food facility inspection indicates evidence of houseflies in dining, basement, and kitchen areas, but facility does not have a pest control program.
  • Observed open shaved steak and other packaged frozen foods stored in a chest freezer in the back corner of the kitchen contaminated with exposed insulation from a damaged lid. The insulation is falling into food, and food is adulterated. Discard all food in unit that is exposed to insulation and discard freezer/or repair it.
  • Deli turkey, a commercially processed refrigerated, ready to eat, time/temperature control for safety food, located in the kitchen prep cooler, and held more than 24 hours, is not being marked with the date it was opened. Item was open 2 days prior to inspection. Corrected on site.
  • Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration.
  • Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Nozzles of Ansul system in main kitchen hood have accumulated large amount of grease residue.
  • A utility sink or curbed cleaning facility with a floor drain is not provided in the food facility.
  • Exterior door located in the kitchen area of the food facility has multiple gaps and does not protect against the entry of insects, rodents, and other animals
  • Observed many spray canisters of Hot Shot brand pesticide in the bar area, not labeled by the manufacturer as approved for use in a food facility. All cans were removed during inspection. Pesticides may only be administered by a licensed and certified pest management applicator.
