21 inspection violations for Chambersburg’s Cafe del Sol; Food prep and cook area air duct emitting dust and dirt into the air

The Borough of Chambersburg conducted an unannounced retail food inspection on January 14, 2020. As a result of that inspection, and due to the severity of the specific violations the Café Del Sol was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 21 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Employee personal items (drinks) were observed in production area over mixer, and not stored in dressing rooms or identified storage area as required. Corrected on the spot.
  • The handwash sink in the cooks area was blocked by table and not accessible at all times.
  • Observed equipment in microwave and can opener in the kitchen area, with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces.
  • Food located in the walk-in, prep, refrigerator are not marked with date it was opened.
  • Food facility does not have available sanitizer test strips.
  • Potentially hazardous food was held for more than 24 hours located in the walk-in, prep refrigerator, freezer, and not being date marked.
  • Facility does not have vomitus kit.
  • French fry chopper, pizza station pans, and slicer were observed to have food residue and were not clean to sight and touch.
  • Thermometers for ensuring proper temperatures of food are not available.
  • Loose gaskets and broken seals observed in several doors.
  • Prep and cooks area intake/exhaust air duct needs cleaned and filters changed as it is emitting dust and dirt into the air.
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Food in the walk-in, freezer, prep, and sandwich areas are stored open without covers.
  • Food scoop in rice observed in food with the handle not above the top of food.
  • Observed food in the prep area under dirty vent ducts.
  • Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil.
  • Observed clean food equipment (pans) stored uncovered or not inverted.
  • The light intensity in the walk-in is not at least 10 foot candles.
  • Ceiling tiles missing in the cooks area and need replaced.
  • Mop sink hose attachment is hanging below floor rim.
  • Old unused equipment stored in cooks area and should be removed from the food facility.
  • Cleaning frequency – dirty and dusty and in need of cleaning behind soda machine, floors, under equipment and inside refrigerators.
