The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 8/20/2020. As a result of that inspection, and due to the severity of the specific violations the Pocono Resort & Conference Center was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 21 violations were found.
This marks the third straight “Out of Compliance” finding at a regular inspection according to the Department of Agriculture:
The inspector made the following comments in support of the violations found during the inspection:
- Pizza observed on the cook line moldy and is adulterated.
- Food in the cooler on the cook line is moldy and is adulterated.
- Observed one dead insect in bottle of sloe gin in the bar area.
- Drain tray of CoffeeMate creamer dispensing machine observed to have build up of old food residue and is in need of more frequent cleaning.
- Observed cooking equipment/pans/utensils, around the handwash sink area, with encrusted grease and old food residue accumulation.
- Shelving used for pan/dish storage along cook line with build up of old food residue and in need of more frequent cleaning.
- Observed clean equipment and utensils and food stored in kitchen and storage areas directly on the floor, and not 6 inches above the floor.
- Equipment not in use to be removed from facility.
- Food facility is using an approved non-public water system, but does not have current laboratory testing results for water potability. Facility contacted laboratory and results were forwarded to facility at the time of this inspection.
- Old food residue, dishes and utensils observed in the handwash sink, indicating uses other than handwashing.
- Plumbing system not maintained in good repair – observed water leaking from the dish machine drain onto the floor.
- Plumbing system not maintained in good repair – observed water leaking from the faucet of hand wash sink in dining room area.
- Exterior surfaces of cabinets in dining room/customer self-service area of the food facility have build up of old food residue, and in need of cleaning.
- Facility has accumulation of old equipment, dishes, glassware, utensils and broken ceiling tiles on the floors and counter tops throughout facility.
- Floor of walk in cooler observed with build up of old food residue, and in need of cleaning.
- Food in the kitchen area stored open with no covering.
- Observed common bowls being used as scoops in bulk ingredients.
- Observed food stored directly on the floor in the walk in cooler, rather than 6 inches off of the floor as required.
- Mechanical ware washing machine had a mineral buildup observed inside and is in need of more frequent cleaning.
- Observed build up of old food residue and filth on top of dish machine and on dirty dish return.
- Cleaned and sanitized utensils are stored with food contact surfaces / food or lip area exposed to hand contact when retrieved by food employees.
- Observed receiving door in kitchen area with an approximate 1-2 inch gap which does not prevent the entry of animals and pests.
- Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours is not being date marked.
- Food facility does not have available chlorine sanitizer test strips or test kit to determine appropriate sanitizer concentration.
- The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
- Coffee machine dispensing nozzles, food contact surfaces, observed to have old food residue and were not clean to sight and touch.
- Food prep tables throughout facility, food contact surfaces, observed to have old food residue and were not clean to sight and touch.
- Interior surfaces of microwaves in kitchen and dining room, food contact surfaces, observed to have old food residue and was not clean to sight and touch.
- Interior surfaces/lids of pan warmers, food contact surfaces, observed to have old food residue and were not clean to sight and touch.
- CoffeeMate creamer dispensing machine nozzles, food contact surfaces, observed to have old food residue and were not clean to sight and touch.
- Interior surfaces/lid of bain marie, food contact surfaces, was observed to have old food residue and was not clean to sight and touch.
- The food facility does not have the original certificate for the certified food employee posted in public view.
- The handwash sink in the kitchen area does not have single use towels, continuous towels, or air drying device.
- Multiple ceiling tiles missing throughout kitchen and storage areas, and need replaced.
- Roof is leaking water in The Stable Restaurant area, and is in need of repair.
- Working containers in kitchen area, used for storing chemicals/cleaners taken from bulk supplies, were not marked with the common name of the chemical.
