26 violations at Coyote Crossing in Conshohocken; Mouse like droppings near oven, Lacking soap at hand wash sinks throughout

The Montgomery County Department of Health and Human Services Office of Public Health (MCOPH) conducted an unannounced retail food inspection on 7/9/2020. As a result of that inspection, and due to the severity of the specific violations Coyote Crossing was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 26 violations were found and include one or more violations determined to be food borne illness risk factors.

The inspector made the following comments in support of the violations found during the inspection:

  • MCOPH Certified Food Sanitation Manager Certificate not posted at time of inspection.

  • Employee beverage stored at cook line without a lid.

  • Lacking single use paper towels at hand wash sink thru out.

  • Hand wash sinks lacking soap at hand wash sinks thru out.

  • Lacking hot water under pressure at hand wash sink next to mop.

  • Hand wash sink at end of cook line blocked by table with cooking equipment.

  • Chemical sanitizing dish machine at bar area not recording proper sanitation levels. Facility may not use unit until repaired and given written permission from MCOPH. Send completion work order stating chlorine concentration to MCOPH.

  • Cooked chicken stored on grill observed with internal temperature less than 135 degrees F. Facility reheated at time of inspection.

  • Cooked chicken stored on grill observed with internal temperature less than 135 degrees F. Facility reheated at time of inspection.

  • TCS food items held in dessert prep unit observed with internal temperature greater than 41 degrees F. Facility voluntarily discarded 1 container whip cream and I cheese cake.

  • 3xR- Lacking asterisk next to food items requiring consumer advisory.

  • Facility observed using ROP without an approved HACCP plan from MCOPH. Facility using Reduce Oxygen Packaging (ROP) to include vacuum packaging, sous vide, and cook-chill must submit a HACCP plan for approval. Exception if product is labeled with production date/time, held at 41 degrees F and removed from ROP within 48 hours within the food facility where packaged a HACCP plan is not required. ROP packaging process must be performed with a NSF or commercially equivalent equipment. Fish for ROP must be frozen prior and during. Packaging must be open prior to defrosting.

  • Dessert prep unit observed with internal temperature greater than 41 degrees F. Facility may not use equipment for holding TCS foods until repaired and given written permission from MCOPH. Send completion work order stating internal temperature to MCOPH.

  • Facility lacking visible accurate thermometers in several cold units.

  • Mouse like droppings observed on the floor in the corner near oven. Clean and sanitize area. Facility has 10 business days to provide proof of next professional pest control treatment to MCOPH

  • Window open in dish area lacking screen.

  • Food stored on floor inside walk in coolers.

  • Foil lining racks in dish area.

  • Damaged door gasket and door on meat walk in refrigerator.

  • Table under grill unclean.

  • Packing material lining sous vide machine on cook line.

  • Leak at mop sink faucet. Facility has 24 hours to repair. Contact MCOPH when repair is completed. If there is an additional follow up or more needed Facility will have to pay $330.00 each follow up before scheduled follow up appointment.

  • Hand wash sink next to mop sink slow draining. Facility has 24 hours to repair. Contact MCOPH when repair is completed. If there is an additional follow up or more needed Facility will have to pay $330.00 each follow up before scheduled follow-up appointment.

  • Ground around trash dumpsters unclean.

  • Floor under frozen drink machine unclean.

  • Paint peeling over dish machine.
