The Montgomery County Department of Health and Human Services Office of Public Health (MCOPH) conducted an unannounced retail food inspection on December 11, 2019. As a result of that inspection, and due to the severity of the specific violations the Al-Sham Restaurant was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 13 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • MCOPH Food license not posted onsite.
  • Cutting boards with grooves and discoloration.
  • TCS food items* held in prep unit observed with internal temperature greater than 41 degrees F. Facility voluntarily discarded 10 skewers of beef and 2 containers cut tomatoes.
  • Prep unit at end of cook line and table-top 2 door reach in unit in back prep area unable to hold TCS food items at proper cold holding temperatures. Facility may not use equipment for holding TCS foods until repaired and given written permission from MCOPH. Send completion work order stating internal temperature to MCOPH. Facility was able to adjust prep unit before end of inspection and area able to use for TCS food items.
  • Frozen ROP fish stored in refrigerator for defrosting. Facility open packaging to defrost.
  • Facility lacking visible accurate thermometers in refrigeration units.
  • 2XR- Mouse like droppings observed on the floor in ware wash area and fly like insects observed in back prep area. Clean and sanitize area. Facility has 10 business days to provide proof of next professional pest control treatment to MCOPH
  • Unapproved flypaper hanging in back prep area.
  • Food items stored in reused cardboard boxes in front 3 door freezer.
  • Food handler lacking hair/beard restraint
  • Sealed single use items stored in unapproved basement of Pharmacy next door. Facility has 24 hours to relocate single use items to an approved area. Failure to comply may lead to legal action. If there is an additional follow up or more needed Facility will have to pay $325.00 each follow up before scheduled follow up appointment.
  • Under flat top griddle unclean.
  • Bottom of 2 door reach-in freezer in back prep area is unclean.

*Foods that need time and temperature control for safety—known as TCS foods—include milk and dairy products, eggs, meat (beef, pork, and lamb), poultry, fish, shellfish and crustaceans, baked potatoes, tofu or other soy protein, sprouts and sprout seeds, sliced melons, cut tomatoes, cut leafy greens, untreated garlic.
