The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 2/19/2020. As a result of that inspection, and due to the severity of the specific violations the Brickerville House Family Restaurant was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 8 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- Dishwasher did not wash hands between handling dirty and clean dishes and utensils.
- Observed soup cooling in several 5 gallon buckets rather than in shallow pans.
- Dishwasher is not using chlorine test strips in the 3 bay sink to ensure correct sanitizer concentration as evident by a high reading.
- The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
- Tongs observed stored on grill handle rather than a clean, protected surface.
- The chlorine concentration in the sanitizing solution of the 3-bay ware wash sink was 200 ppm, rather than 50-100 ppm as required.
- Food facility has a reminder statement on the menu for foods that are / or could be served raw or under cooked to the consumer; however, does not clearly disclose which foods the reminder statement applies to.
- Observed a cloth in the back kitchen hand washing sink indicating uses other than hand washing.
