The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on7/13/2020. As a result of that inspection, and due to the severity of the specific violations Big Shot Bob’s House of Wings in  Uniontown was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 16 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • PIC unaware of how to set up proper wash/rinse/sanitize procedure. PIC unaware of how to calibrate thermometer.
  • Two knives food contact surfaces, were observed to have food residue and were not clean to sight and touch. In-use cutting boards at sandwich prep unit observed worn and stained. Cutting boards removed for re-surfacing. Food debris observed on food-contact surface of magnetic knife strip. Interior of flip-top sandwich prep unit rusted.
  • No paper towels available at kitchen handwashing sink.
  • Flies present in food preparation and storage areas.
  • Food employees observed in kitchen area, not wearing proper hair restraints, such as nets, hats.
  • A food employee was observed touching bread for hoagie with his bare hands. Product discarded.
  • Single-use carryout boxes stored with food-contact surface exposed. Single use forks and knives stored in various directions at the front counter for customer self-service.
  • Three-bowl sink has a spray nozzle attachment that is hanging below the flood rim of the sink and not an appropriate air gap.
  • Dumpster lids open when not in-use. Debris observed on dumpster pad.
  • Food Employee did not follow proper handwashing procedure. Single use towel or air drying device not used to dry hands.
  • Individual portioned cups of ranch and blue cheese dressing and mayo measured 68F. Products discarded.
  • Food Employee observed donning single use gloves without a prior hand wash.
  • Opened packages of deli meats held in the reach-in cooler without discard dates.
  • Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration.
  • Excessive oil build-up observed on floor below fryers.
  • Inside of hood canopy is extremely dirty and in need of cleaning.
