China City Buffet in Washington fumbles inspection, “Interior of ice machine, a food contact surface, was observed to have pink and black slime residue”

The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on January 14, 2020. As a result of that inspection, and due to the severity of the specific violations the China City Buffet in Washington was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 5 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Interior of ice machine, a food contact surface, was observed to have pink and black slime residue and was not clean to sight and touch. Emptied during inspection, correction in progress.
  • Food facility unable to provide documentation for procedures, monitoring of critical control points, and corrective actions in the HACCP plan submitted to and approved by the Department. -Establishment is not keep Ph meter calibration log as outlined in the establishment HACCP plan. -Establishment could not locate the buffer solution required to calibrate Ph meter. Sushi operations are complete for today. Violations to be corrected prior to any sushi prep
  • Establishment using plastic bowls with no handles as dry ingredient scoops. Removed during inspection.
  • Mechanical ware washing equipment observed with build up of filth and food residue along the top of doors, not cleaned before use, and frequently throughout the day. Cleaned during inspection.
  • An insect control device located in kitchen area with potential to contaminate food and equipment. Fly strips above work table. Removed during inspection.
