The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 7/1/2020. As a result of that inspection, and due to the severity of the specific violations the China Wall was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 13 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Observed raw chicken stored over broccoli in walk-in refrigerator. Observed raw shell eggs stored over vegetables in prep unit. (potential contamination if meat drips from packaging)
  • Flour and sugar storage containers, are not labeled with the common name of the food.
  • Observed food stored directly on the floor in the walk-in refrigerator, rather than 6 inches off of the floor as required.
  • Observed deeply scored and discolored cutting board at prep unit not resurfaced or discarded as required.
  • Clean food equipment in ware wash area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting). (see note below)
  • Ceiling tiles observed with water damage throughout facility.
  • Food employee observed in kitchen area, not wearing proper hair restraints, such as net or hat.
  • Observed chicken and rice cooling at room temperature, which is not a proper cooling method.
  • Observed shelving in walk-in refrigerator to have food debris and residue and were not clean to sight and touch.
  • Employee toilet rooms does not have a self-closing door.
  • Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the walk-in refrigerator, is not being date marked.
  • Can opener blade, a food contact surface, was observed to have food residue and was not clean to sight and touch.
  • Wall located behind prep table observed to be damaged and is not smooth and easily cleanable.
