Complaint leads to inspection of McKeesport’s Twin Oaks Lounge; mold in ice machine, soda gun holsters have built up residue, 10 violations

The Allegheny County Health Department’s Food Safety Program conducted an unannounced retail food inspection following a complaint from the public on January 2, 2020. As a result of that inspection, and due to the severity of the specific violations the Twin Oaks Lounge was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 10 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Consumer advisory is not present on menu. You must disclose health risk of consuming raw or undercooked foods, and link the statement to applicable items.
  • Tomatoes, cheese, some lunch meats in the top section of the prep cooler (left side of unit) were between 43-50F. All other temperatures in this unit were 41F and lower.*
  • Batter at frying station is not under temperature control, at 69F. This batter contains milk and egg and must be under temperature control.
  • Creamer is sitting out at room temperature at server area in side room, and in bar cooler at 47F. These creamers are marked “keep refrigerated” and must be held at 41F or lower.
  • Date marking system is in place, but not all foods requiring dates have been marked. Ensure that all foods that are temperature controlled for safety and held longer than 1 day have a discard date no longer than 7 days from preparation.
  • Ice machine has mold on the inside of the machine and residue on many of the parts of the top section as well. This machine needs thoroughly cleaned. Drain this machine and do not use until it has been cleaned. This is a repeat violation.
  • Fry cutter is soiled from old debris and old splash residue is present on surrounding walls. This equipment must be cleaned and sanitized after each use.
  • Slicer has old dried food debris behind the blade and on the deck of the machine. Clean and sanitize after each use, or every 4 hours if in continuous use.
  • 3 bowl sink faucet leaks when hot water is on. Hot water is controlled by shutoff valve near door between dining room and kitchen. Repair faucet/handle of the 3 bowl sink
  • Sink that is designated for hand washing had dirty dishes in it and food residue from rinsing dishes.

* The temperature danger zone is food temperatures between 41 and 135 degrees Fahrenheit and the most rapid bacteria growth occurs between 70 and 125 degrees Fahrenheit. The longer food sits in this temperature range, the greater the risk that bacteria will begin to grow on food.
