Employees not washing hands after handling soiled tableware; Cafe Soul in Doylestown dinged for 7 violations by Health Department

The Bucks County Department of Health conducted an unannounced retail food inspection on January 3, 2020. As a result of that inspection, and due to the severity of the specific violations the Café Soul in Doylestown was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 7 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Food employees are not washing their hands as required before putting on gloves, after handling soiled tableware, after handling raw meat, before handling clean tableware, equipment, utensils. CFSM must review hand washing requirements with staff.  New Violation. To be Corrected By: 01/03/2020
  • Cooked time/temperature control for safety (TCS) such as scrapple shall be cooled as follows:
    (1) Within 2 hours, from 135°F to 70°F; and
    (2) Within 6 hours, from 135°F to 41°F or less.Assisted cooling methods shall be used (such as refrigeration, ice bath, ice paddles, etc.).  Corrected On-Site.  New Violation. To be Corrected By: 01/03/2020
  • The following were measured out of required temperature (degrees F):
    A. shell eggs 56;
    B. eggs out of shell 56;
    C. items in/near the ice bath cheese 66 66, 59, 56, 59, ham 53, sausage 48;
    D. turkey stored above rails in the bain marie 62.Foods that require time/temperature control must be maintained 41 or below; such foods noted in the above locations were discarded on-site. Recommend installation of a new bain marie on the main cook line; if you wish to use an ice bath, use a thermometer to ensure 41 or below is maintained.  Repeat Violation. To be Corrected By: 01/03/2020
  • Food stored on the floor in the walk-in freezer. Store foods (except pressurized beverage containers) at least 6 inches off the floor.  New Violation. To be Corrected By: 01/03/2020
  • Food workers are not wearing hair restraints as required. Employees shall wear hair restraints such as hats, hair coverings or nets, that are effectively designed and worn to keep their hair from contacting exposed food; clean equipment, utensils and linens; and unwrapped single-service and single-use articles.  Corrected On-Site.  New Violation. To be Corrected By: 01/03/2020
  • The following locations need cleaning:
    A. main exhaust hood (closest to seating area); and
    B. under equipment and along the floor/wall junctures throughout kitchen.Maintain all portions of the facility in clean/sanitary condition at all times. Call to schedule hood cleaning for within one week.  New Violation. To be Corrected By: 01/06/2020
  • Dumpster doors open. Keep dumpster lids/doors closed to prevent attraction of insects and rodents to the facility.  New Violation. To be Corrected By: 01/03/2020
