The Chester County Health Department conducted an unannounced retail food inspection on Jauary 6, 2020. As a result of that inspection, and due to the severity of the specific violations the Fontana Pizza & Grill was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 8 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Raw shell eggs were observed stored over ready-to-eat foods in the walk-in cooler. Move raw, animal-derived foods to the bottom of shelving units, or store in a dedicated area segregated away from other ready-to-eat foods. This violation was corrected on site.
  • Cutting boards throughout the facility were observed with deep scoring and staining on the surface. These boards should be resurfaced or replaced as needed.
  • Bottom of the white standing freezer near the walk-in cooler has accumulated food debris at the bottom of the unit. Clean.
  • One wiping cloth sanitizer container in the rear of the kitchen measured with a chlorine concentration of 0 ppm. This violation was corrected on site. Ensure sanitizer solutions are at a concentration of at least 50 ppm at all times.
  • Single-service dressing cups are used as scoops in various dry ingredients containers (garlic powder, salt, etc.). Please provide a food-grade scoop with a handle for dispensing.
  • Food debris/dirt was observed on floor perimeters, particularly underneath the cook’s line equipment. Furthermore, the facility is lining shelving surfaces throughout the kitchen with cardboard, an absorbent, non-cleanable surface. Many cardboard pieces are dirty or have absorbed oil or other liquids. Surfaces must be smooth, non-absorbent, and easily cleanable.
  • Multiple dead insects were observed in light shields throughout the rear of the kitchen. This was reportedly due to a bee infestation outside the rear exterior door last summer. Please clean the light shields at a time when the kitchen is not in operation.
  • Employee personal items found stored on food preparation surfaces and storage shelving in the facility. Personal items should be segregated completely from the facility’s food operation at all times. Violation corrected on site.
