The Chester County Health Department conducted an unannounced retail food inspection on January 8, 2020. As a result of that inspection, and due to the severity of the specific violations Fiorello’s Café was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 10 violations were found.

Fiorello’s Café has failed 4 inspections since January 2018:

  • January 9, 2018- 10 violations
  • January 24, 2018- 2 violations at the follow-up inspection
  • January 31, 2018- passed with no violations 2nd follow-up inspection
  • January 8, 2019- 8 violations
  • January 23, 2019- passed follow-up inspection although one lessor violation was cited.

The inspector made the following comments in support of the violations found during the inspection:

  • Clean the wall-mounted fan in the dry storage area.
  • The red exterior door in the kitchen has gaps all around the door, thus does not protect against the entry of insects, rodents, and other animals. Make repairs such as adding kick plates and door sweeps to eliminate all gaps. Note: Door may also be replaced instead of repaired.
  • In the pizza bain marie, ambient air and food (cheese, red sauce) were found with temperatures in the danger zone, ranging from 48F-53F, rather than 41F or below as required. Foods must be discarded. Do not use unit until it is repaired to maintain air and food at 41F or below. Note: Some foods discarded and some recently stocked foods were relocated at time of inspection. In the walk-in refrigerator, ambient air and food (meats, cheese) were found with temperatures in the danger zone, ranging from 42-44F, rather than 41F or below as required. Unit must be repaired to maintain air and food at 41F or below.
  • Remove the wicker-style bread basket which is used to store unwrapped bread loaves, as this basket cannot be properly ware washed. Use a commercial grade container to store bread.
  • Repair leak from the pipes below the 3-bay sink.
  • Along the self-service buffet, some foods such as pizza was observed without protection such as sneeze guards, lidded containers or other effective means to prevent against contamination. To prevent contamination, install additional sneeze guards or lidded containers. Foods must be adequately placed under sneeze guards and lids in order to be protected. REPEAT VIOLATION.
  • Latch and handle on walk-in refrigerator door is broken. Replace/repair the latch and handle so door can be opened and closed with ease, along with being tightly sealed. Note: Door may also be replaced instead of repaired.
  • Replace all damaged white-coated shelving above the 3-bay sink and adjacent area in the kitchen. Install only commercial stainless steel wire racks.
  • Clean and sanitize the following: * interior bin and surfaces of ice machine * can opener * tongs hanging by Ansul pull (relocate). (Ansul is an emergency fire suppression system)
  • No hot water was available at the hand wash sink by the brick oven. Made needed repairs to restore 100F or above hot water to this sink.
  • Add additional hooks above the mop sink for mops to be hung dry.
