The Bucks County Department of Health conducted an unannounced retail food inspection on 7/6/2020. As a result of that inspection, and due to the severity of the specific violations Frank’s Trattoria was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 7 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

Employee is not wearing a face mask and several employees have their face mask below their nose. In accordance with the Governor’s Mandate of 7/1/20 and recent Covid 19 guidelines during the GREEN PHASE, facemasks or face shields must be worn by all employees. All employees must wear facemasks or face shields over their nose and mouth. Employees donned masks and wore them properly during the inspection.  Corrected On-Site.  New Violation. Observed worker place soap on their hands and immediately rinse the soap off without lathering and drying hands on apron.
Food employees shall clean their hands and exposed portions of their arms for at least 20 seconds using a cleaning compound in a handwashing sink by using the following cleaning procedure:
(i) Create vigorous friction on the surfaces of the lathered fingers, finger tips, areas between the fingers, hands and arms for at least 10-15 seconds.
(ii) Thoroughly rinse under clean running, warm water.
(iii) Immediately follow the rinse with thorough drying of cleaned hands and arms.
Review proper hand washing with all employees.  New Violation. To be Corrected By: 07/06/2020
The hand wash sinks in the front counter area and main prep area are blocked. A handwashing facility shall be maintained so that it is accessible at all times for employee use.  New Violation. To be Corrected By: 07/06/2020

Several products held in refrigeration are not being covered. Cover all products in refrigerators to prevent contamination.

Raw Time/Temperature Control for Safety (TCS) products are being stored directly over ready to eat foods. Always store raw TCS products under ready to eat foods.

Bowls and cups are used to dispense some bulk food items. Use a scoop with a handle to dispense food items and minimize contact.  New Violation. To be Corrected By: 07/06/2020

Chicken, potatoes, garlic oil, and steaks are allowed to remain at room temperature.
Time/temperature control for safety (TCS) food must be cold held at or below 41ºF.  New Violation. To be Corrected By: 07/06/2020
Deli meats and other ready to eat time/temperature control for safety (TCS) foods are not being date marked as required.
Refrigerated, ready-to-eat, TCS food prepared and held in a food facility for more than 24 hours shall be clearly marked to be sold or discarded within 7 days or the manufacturers use by date whichever comes first.
Deli meat date marked 6/26/20. Discard any ready to eat time/temperature control for safety (TCS) foods after 7 days as required.  New Violation. To be Corrected By: 07/06/2020
