The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on January 14, 2020. As a result of that inspection, and due to the severity of the specific violations the Hops at the Paddock in Allentown was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 14 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • An open employee’s beverage container was observed in cook line area, a food preparation area. Corrected.
  • Bain marie interiors of the salad prep unit; non-food contact surfaces not cleaned at a frequency to preclude accumulation of food-debris and mold-like substance.
  • Observed various frozen foods stored directly on the floor in walk-in freezer area, rather than 6 inches off of the floor as required. Corrected.
  • Food facility does not have available sanitizer test strips to determine appropriate sanitizer concentration of either the chlorine sanitizer at both the bar glass ware washer or the kitchen chlorine sanitizer. Facility also does not have available test strips to determine the concentration of the QUAT-ammonia based sanitizer of the box wall structure above the 3-bay manual ware-washing unit.
  • The hand wash sink located in the women’s bathroom area does not have water at a temperature of at least 100°F.
  • Ceiling tiles missing in the dessert prep area and the ware-washing area, and need replaced. PIC noted repairs are currently being done for a possible leak in the area.
  • Various ready to eat foods and salad food items in various bain marie equipment in kitchen and cook lines stored open with no covering. Corrected.
  • Observed deeply scored cutting boards not resurfaced or discarded as required on various bain marie equipment and smaller mobile cutting boards.
  • Wall directly adjacent to the pizza ovens on the cook line is cracked / roughened / and is not a smooth, easily cleanable surface. Currently being repaired with white duct tape like item; in need of proper repair.
  • Food Employee observed donning single use gloves without a prior hand wash and not changing gloves between tasks, or eating/drinking. Corrected and discussed with PIC.
  • Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing bar glass dishwasher was 0 ppm, and not 50-100 ppm as required. PIC placed service call into Ecolab for repair. Corrected by diverting all bar ware-washing to the kitchen ware-washing machine for sanitizing.
  • A working container of glass cleaner was stored above or on the same shelf with food, and equipment at the salad prep bain marie. Corrected.
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Observed clean food equipment and/or utensils in dessert area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting).
