Hong Kong Gourmet

The Bucks County Department of Health conducted an unannounced retail food inspection on 7/29/2020. As a result of that inspection, and due to the severity of the specific violations the Hong Kong Gourmet was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of XX violations were found.

The inspector made the following comments in support of the violations found during the inspection:

Upon arrival, several employees did not have a face covering on. Advised staff that they must wear a face covering at all times. Staff provided face coverings.  Corrected On-Site.  New Violation.  

The two hand sinks in the kitchen did not have paper towels when inspection began. Owner provided paper towels. Ensure hand sinks are always supplied with hot and cold water, soap and paper towels.

Also, there were items being stored in the hand wash sinks. Do not store items in the hand wash sink. It is only to be used for hand washing. The items were removed.  Corrected On-Site.  New Violation.  

Raw Time/Temperature Control for Safety (TCS) products are being stored directly over ready to eat foods in the walk in cooler. Always store raw TCS products under ready to eat foods.  New Violation. To be Corrected By: 07/29/2020  
Several products held in refrigeration are not being covered. Cover all products in refrigerators to prevent contamination.  New Violation. To be Corrected By: 07/29/2020  
The mechanical dishwasher was not reaching the required wash and rinse temperature. The wash and rinse temperature must be at 120°F during the wash and rinse cycles. Owner adjusted hot water heater and now the wash is reaching 120°F and the final rinse is reaching 122°F.  Corrected On-Site.  New Violation.  

*Egg rolls that were made yesterday were not cooled properly. They were also being stored in a deep container and sitting on top of one another.
Cooked time/temperature control for safety (TCS) food shall be cooled as follows:
(1) Within 2 hours, from 135°F to 70°F.
(2) Within an additional 4 hours, from 70°F to 41°F or less

Also, cool foods in a shallow container in the walk in cooler or freezer to ensure they are meeting the cooling requirments. The egg rolls were discarded.  Corrected On-Site.  New Violation.  

Chopped garlic in oil was sitting out and was not at a safe temperature. Chopped garlic in oil is a hazardous food product and must be kept at 41°F or below. The garlic in oil was discarded.  Corrected On-Site.  New Violation.  
The top glass sushi refrigerator is not holding the fish at a safe temperature. The fish was relocated. Time temperature control for safety foods must be cold held at 41°F or below.  New Violation. To be Corrected By: 07/29/2020  

Observed shrimp improperly thawing in the 3 compartment sink. Do not use the 3 compartment sink for thawing foods it must be thawed at the prep sink. Also, foods cannot be thawed by sitting in stagnant water. The food product must be thawed as follows:
1) Taken from the freezer and placed in a refrigerator that can hold the food product at 41°F or below
2) Cooked immediately from a frozen state
3)Completely submerged under running water at a water temperature of 70°F or below; with sufficient water velocity to agitate and float off loose particles in an overflow. The food product must stay at 41°F or below.

The shrimp was placed in the walk in cooler to thaw.  Corrected On-Site.  New Violation.  

Observed live adult roach and baby roaches at the dishwasher area. Advised owner to contact exterminator immediately. An exterminator company must be out within 24 hours to address issue. Extermination will need to be conducted weekly and all areas need to be cleaned and sanitized. If failure to do so, this Department will close the establishment until issues are completed.  New Violation. To be Corrected By: 07/30/2020
