The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 7/9/2020. As a result of that inspection, and due to the severity of the specific violations McArdle’s Pub was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 13 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- Soda gun holder at bar has an accumulation of slime mold residue on interior of holder. Corrected.
- Metal wire shelving food racks in walk in cooler have an accumulation of mold, dirt, food residue and must be cleaned. Also dry storage racks have a dust, dirt build up and must be cleaned.
- Reach in bar refrigerator has a mold build up along back wall and bottom of refrigerator.
- The food facility does not have the original certificate for the certified food employee posted in public view.
- A utility sink or curbed cleaning facility with a floor drain is not provided in the food facility. Mop water is disposed of in ware washing sinks at this time.
- Ceiling in the kitchen area next to hood system, has a hole/loose tape material hanging or is broken and in need of repair.
- Observed hood system, Ansul system grill cooking equipment in the kitchen area, with a heavy encrusted grease and soil accumulation and must be cleaned.
- Observed clean glasses/cups in bar area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting* see below).
- The light intensity in the food preparation area is not at least 50 foot candles. Half of light bulbs were not on in light fixtures.
- Dry storage shelves of food under leak damaged ceiling that has exposed insulation/drywall that must be repaired.
- Oil residue dripping from Ansul pipes above cook line and must be cleaned.
- Observed deeply scored bain marie cutting boards not resurfaced or discarded as required.
- Old moldy food debris under shelving in walk in cooler. Old food debris under cutting board of bain marie unit.
- Lights are not shielded or shatterproof over the kitchen area.
- Walk in cooler fan box and ceiling area of the food facility is extremely dirty, dusty, and in need of cleaning.
*Wet nesting refers to the practice of placing two recently-washed items together in a nested fashion, preventing proper airflow. In a moist, dark, low-air environment, unseen bacteria grows unchecked, and suddenly that mixing bowl is a biological incident waiting to happen. Even at high temperatures, the food or ingredients you place on that wet-nested kitchen equipment can act as an accidental insulator, or even as fuel for further bacterial growth.
