The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 7/16/2020. As a result of that inspection, and due to the severity of the specific violations the Mirakuya Japanese Restaurant was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 10 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Common bowls being used in bulk tempura and rice ingredients.
  • Food Facility Person in Charge not able to produce records showing that raw or partially cooked ready to eat fish has been frozen by the facility or approved supplier as required, before use or sale. Supplier to fax a copy to owner.
  • Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Repairman contacted at the time of this inspection. Facility to use 3 bay sinks to sanitize until repair is complete.
  • Buildup of dust and debris on the top of the mechanical ware washing equipment.
  • Observed 3-5 flying insects around drain of utility sink.
  • Observed 5-10 old rodent droppings near mop storage in utility area of facility.
  • A Food Employee was observed washing their hands at the food prep sink rather than the designated handwash sink. Employees were told to use hand sink for hand washing only during this inspection.
  • Old food residue observed in the handwash sink, indicating uses other than handwashing.
  • The handwash sink in the food prep area was blocked by bowls of sauce and not accessible at all times for employee use. Bowls were removed during this inspection.
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Observed a build up of residue on the exterior of bulk food ingredient storage containers.
  • Observed fan in dish storage area with an accumulation of dust and dirt.
  • Ceiling tiles missing in the kitchen area, and need replaced.
