Inspection MT Fuji in Southampton goes wrong; “In use rice scooper was stored in stagnant water,” 9 violations

The Bucks County Department of Health conducted an unannounced retail food inspection on 8/26/2020. As a result of that inspection, and due to the severity of the specific violations MT Fuji was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 9 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

Employees were observed washing hands at the 3 compartment sink. Advised staff to wash hands at the hand washing sinks only. Employees corrected immediately.  Corrected On-Site.  New Violation.  

These areas are unclean:
Interior of ice machine
Slicer blade

Chicken, butter and some other time temperature control for safety foods in the prep top refrigerator in the kitchen are not at a safe temperature. Time/temperature control for safety (TCS) food must be cold held at or below 41ºF. Contact service company to address issue to ensure the refrigerator can hold foods at a safe temperature.  New Violation. To be Corrected By: 08/26/2020  
Employees currently use a pH meter to check that acidified rice is within the correct pH range. However, they are only checking with the 4.01 pH solution and not the 6.86 buffer solution. Also, there is no distilled water to properly calibrate the pH meter. Provide these and train staff on how to use the pH meter properly.  New Violation. To be Corrected By: 08/27/2020  
The screen door in the back is in poor repair. Replace screen to ensure no pests or vectors can enter the building.  New Violation. To be Corrected By: 08/28/2020  
In use rice scooper was stored in stagnant water. Do not store utensils in stagnant water. Store rice scooper on a clean food contact surface and clean at least every 2-4 hours. CFSM corrected immediately.  Corrected On-Site.  New Violation.  
There is still ice build up in the walk in freezer. Contact service company to fix unit to ensure no ice build up.  Repeat Violation. To be Corrected By: 08/28/2020  
The 3 compartment sink at the sushi area is not being used due to the COVID 19 pandemic. All wares are being washed, rinsed and sanitized in the kitchen. However, this sink still should be functioning properly. When ran the floor drain to this sink backed up and water was all on the floor. Repair to ensure it does not back up.  New Violation. To be Corrected By: 08/28/2020

-Sides, undersides and interior of cookline equipment especially fryer area
-Floors under cookline equipment
