The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 8/4/2020. As a result of that inspection, and due to the severity of the specific violations the Pizza Roma Family Restaurant was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 10 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Pizza toppings left on prep table during lunch, cheese – 65F, pepperoni – 67F. Must maintain temperature control for TCS items or use time as control and label them.
  • Loose rubber door gaskets observed on the walk-in freezer, pizza prep cooler and line freezer.
  • Black filth observed on the interior of the ice machine bin. DO NOT USE. Please empty ice machine COMPLETELY. Wash, Rinse and Sanitize all parts and allow to air dry before refilling. This machine WAS NOT cleaned during the time of this inspection and bagged ice will be utilized until approval is obtained / machine is full.
  • Floors in entire back of house and under equipment have excessive debris build up. Floors around fryers have grease build up. Walls in several areas have dried on splatters – pizza prep area and cooking area. Static residue on hood and ceiling above pizza ovens and cooking area.
  • Underside of mixer, a food contact surface, was observed to have heavy grease/flour residue and was not clean to sight and touch.
  • Walls and baseboard in several areas have cracked/missing tiles and not a smooth, cleanable surface.
  • Two spray bottles with degreaser are not labeled with the common name of the chemical. Corrected.
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Sauces in hot holding and wing sauce in bucket stored open with no coverings with potential from dust contamination from overhead. Covered.
  • Fangaurds in walk in cooler has dust residuals. Gaskets on several prep coolers have build up. Exterior top and interior of dish machine are unclean.
