Inspection Rai Rai Ramen in West Chester finds Cooked beef ribs were found between 103°F-120°F inside buckets on the floor in the kitchen

The Chester County Health Department conducted an unannounced retail food inspection on 8/17/2020. As a result of that inspection, and due to the severity of the specific violations Rai Rai Ramen & Hawaiian BBQ was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 4 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • The following must be cleaned: 1. Shelving and the bottom inside the 2 Door Atvantco refrigerator. 2. Hood filters and wall below. 3. Inside of the microwave. 4. Inside the 3 Door Refrigerator. 5. Clean all of the walls throughout the kitchen. 6. Clean the shelving under all tables. 7. Clean the floor under all equipment. 8. Organize all boxes/items behind the Front Counter, Dining Area, and the Storage Area. Correct all the above within 7 days.
  • The hot water faucet does not work at the hand sink in the Kitchen. Repair this faucet within 24 hours.
  • A pan of raw chicken was held at 60°F, on a table in the Kitchen rather than 41°F or below as required. It was explained on site that foods must be kept inside refrigeration until ready to use/cook. I was informed it had been out for less than 2 hours-and immediately placed in refrigeration. Comply everyday.
  • Four (4) flats of shell eggs were on a table at 70°F. I was informed they were out for less than 4 hours and were to be boiled in the next few minutes. Again-you must keep potentially hazardous foods in the refrigerated state-this case it is shell eggs so it is 45°F or less-under refrigeration until ready to prepare. Comply everyday.
  • Cooked beef ribs were found between 103°F-120°F inside buckets on the floor in the kitchen. I was informed they had been out about 2 hours. Once foods are steamed off they must be put in shallow pans and immediately placed in refrigeration and be lowered to a temperature of 70°F within 2 hours and 41°F within 6 hours after preparation. This was explained and corrected on site. Comply every day.
