Inspection; Siam Thai Restaurant on 1st Ave in Pittsburgh; Brownish black residue on the edges of the deflector plate in the ice machine

The Allegheny County Health Department’s Food Safety Program conducted an unannounced retail food inspection on 8/19/2020. As a result of that inspection, and due to the severity of the specific violations Siam Thai Restaurant was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 7 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Sliced tomatoes on the top of the prep table in the kitchen measure 46°F
  • Raw sprouts in ice bath In kitchen measures 47°F. Ice is not level with food in container. In order to prepare an ice bath, ensure level of ice is equal with level of food and stir frequently to maintain temperature.
  • Facility is using time as a public health control for temperature controlled for safety (TCS) foods in the kitchen. Containers of raw sprouts and shrimp are in ice baths for 3.5 hours during lunch. Facility is open 11:00am-2:30pm and then TCS foods are returned to coolers.
  • Various prepared foods are being held without discard dates.
  • The In-use rice scoop is being stored in a container of clear, non-running water in the kitchen.
  • There is a brownish black residue on the edges of the deflector plate in the ice machine.
  • There is a leak from the drain under the 2 bowl sink on the right side. Leaking water is being collected in a bucket.
  • There is a daylight visible through the back door of the kitchen. (allows access to vermin)
  • Spring rolls and rangoons are uncovered in the chest freezer in the kitchen area.
  • A large bin of rice and a large bin of salt are being stored on the floor in the room with the chest freezer.
  • Souffle cups without handles are being used to scoop rice and salt. These cups are stored in the bins, in contact with the food.
