The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 1/11/2021. As a result of that inspection, and due to the severity of the specific violations Todd & Rachels was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 9 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Observed cobwebs over the deep-frying units.
  • Increased monitoring and oversight by the person-in-charge is necessary due to the number of risk factor items noted during review.
  • Soap was not available at the handwash sink in the kitchen prep area. Soap was made available during this inspection.
  • Spray bottles in front service area, used for storing chemicals, cleaners taken from bulk supplies, were not marked with the common name of the chemical. Spray bottles were correctly marked during this inspection.
  • Commercially processed refrigerated, ready to eat, time/temperature control for safety food, cheese, located in the walk in cooler, and held more than 24 hours, is not being marked with the date it was opened. All cheese was correctly date marked during this inspection.
  • Refrigerated ready to eat, time/temperature control for safety food, chicken wings, prepared in the food facility and held for more than 24 hours, located in the walk in cooler, is not being date marked. Wings were correctly date marked during this inspection.
  • Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in Baine Marie equipment.
  • Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in reach in cold hold unit.
  • Observed buckets of chicken wings stored directly on the floor in walk in cooler area, rather than 6 inches off of the floor as required. All food was elevated during this inspection.
  • Food in reach in cold hold unit with a temperature of 44*. All food was moved to the walk in cooler until the unit can be serviced to correctly hold food at or below 41*.
  • Observed a build up of dirt and static dust on the fan guards in the walk in cooler.
