The Montgomery County Department of Health and Human Services Office of Public Health (MCOPH) conducted an unannounced retail food inspection on DATE. As a result of that inspection, and due to the severity of the specific violations LaSalle College High School was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 15 violations were found.

The school contracts with Williamson Hospitality to operate food service at the campus.  Food services at this campus have not passed any of the 5 inspections since passing an inspection on August 17, 2019.

The inspector made the following comments in support of the violations found during the inspection:

  • Several hand washing sinks in facility did not have a trash can in perimeter of hand sink.

  • Facility dish machine unable to maintain an approved high heat sanitizing temperature – 66F. Facility voluntarily removed unit from service. Facility is not permitted to place unit back into service without written permission granted by MCOPH. Placing unit back into service without written permission from MCOPH by facility maybe lead to immediate legal actions. Facility instructed to provide MCOPH with work order stating new and approved high heat sanitizing temperature of unit from certified technician.  EHS observed facility set up and begin use of three basin sink system during time of inspection.

  • Sweatshirt observed on cutting board on food prep cooler servicing deli case at start of service line.

  • Chicken items (popcorn / grilled) at reach in cooler behind cooks line observed above an approved cold holding temperature – 47.5F. Items were relocated to walk in freezer – items observed at 34F during time of inspection and relocated back into reach in cooler.

  • Facility with TCS food items* observed with expired discard dates at walk in cooler. one foil catering container of cooked sausage and one large bowl of blued cheese voluntarily discarded.

  • Approved labeling lacking on multiple self service items at retail cooler – pudding, smoothies, desserts, potato salad. Facility stated labels exist for items and were not applied prior to service.

  • Observed live mouse in teachers dining room adjacent to service area. Facility instructed to obtain professional pest control service and fax work order to MCOPH within ten business days. Fax report to MCOPH.

  • Food stored on floor of walk in freezer.

  • Facility storing mason jars of unlabeled food items for personal use at walk in cooler mixed with items for retail used. Facility stated it did not know what items were. COS – items voluntarily discarded.

  • Container of croutons at salad bar area not protected by sneeze guard or packaging. Facility relocated to area under sneeze guard.

  • Some food handlers lacking hair restraints during active service.

  • Sponges stored for use at three basin sink. COS – voluntarily discarded and replaced with scrubber pad.

  • Facility lining area under cutting board with wet wiping cloth for stabilizer. COS – facility voluntarily removed items from service.

  • Ready to eat apples lacking signage stating to wash prior to consuming or being individually wrapped following the items being washed by facility.

  • Facility lacking high heat sanitizing test strips or irreversible high heat thermometer for high heat dish machine.

*Foods that need time and temperature control for safety—known as TCS foods—include milk and dairy products, eggs, meat (beef, pork, and lamb), poultry, fish, shellfish and crustaceans, baked potatoes, tofu or other soy protein, sprouts and sprout seeds, sliced melons, cut tomatoes, cut leafy greens, untreated garlic.
