As a result of that inspection, and due to the severity of the specific violations The Lemont Restaurant was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 4 violations were found. As a result of this inspection the restaurant is in “H” status requiring a follow-up inspection.

  • The high temperature dishwasher downstairs is registering a temperature of 148° F. This is a recurring violation. The sanitizing solution is supplied at a concentration under 100ppm.
  • Some of the facility high temperature test strips have turned to black (indicator of achieving adequate temperature) before use. These can not be utilized to indicate adequate sanitizing temperature.
  • Facility has replaced sticky fly strips with Dichlorvos pest strips in the dish area. This type of strip is only for areas where food is not present or staff is not present on a consistent basis. For example these could be used in a closed basement or trash room.  No pest observed during the inspection. Pest issue is likely resulting from the heavy build up of organic residue and pooling water in the kitchen/ dish area. Working areas should be cleaned and dried at the end of the night to prevent and idea pest habitat.
  • Wall and silicone caulking at the 3 bowl sink is black with mold like residue and old organic material and moisture.
  • Whole upstairs dish area is collection moisture, mold like substance, and organic residue due to lack of sufficient cleaning. Downstairs dish area appears to lack regular cleaning and contains old food debris, dust, and moisture accumulation
