Pocono Resort Conference Center inspection finds multiple moldy foods, tortilla shells & tea packets chewed , rodent droppings, dead insects in rice

The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 1/19/2021. As a result of that inspection, and due to the severity of the specific violations the Pocono Resort Conference Center was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 10 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Food facility has an employee who held a Certified Food Manager certificate; however, the certificate has expired and is no longer valid.
  • Rice being stored in black garbage bags.
  • 5 pound bags of potatoes stored directly on the floor, rather than 6 inches off of the floor as required.
  • Commercially processed refrigerated, ready to eat, time/temperature control for safety food, located in all of the refrigerators at the facility, and held more than 24 hours, is not being marked with the date it was opened.
  • Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required.
  • –Multiple food items (pizza sauce, green bean casserole, some unidentifiable) throughout facility observed spoiled/moldy and adulterated.
    –Observed 3 – 32oz cartons of liquid eggs intended for use within facility date marked 9/22/2020. Eggs were voluntarily disposed of at the time of this inspection.
    –Observed case of 4 – 5lb. bags of bread crumbs chewed and observed 50-100 rodent droppings within case. Entire case of bread crumbs was voluntarily disposed of at the time of this inspection.
    –Observed opened 5 gallon bucket of dill pickles on storage shelf below prep table. Label indicates pickles must remain refrigerated. Pickles were voluntarily disposed of at the time of this inspection.
    –Observed 5 bags of tortilla shells chewed and observed 20-30 rodent droppings in and around packaging. All Tortilla shells were voluntarily disposed of at the time of this inspection.
    –Observed 1 open case of dried alfredo seasoning packets chewed and observed 50-100 rodent droppings within case. Entire case of seasoning was voluntarily disposed of at the time of this inspection.
    –Observed half gallon of whole milk intended for use within facility date marked 12/8/2020. Milk was voluntarily disposed of at the time of this inspection.
    –Observed open case of 10 powdered iced tea packets chewed and observed 50-100 rodent droppings within case. Entire case of iced tea was voluntarily disposed of at the time of this inspection.
    –Observed visible evidence of contamination, approximately 5 dead insects, in bulk rice bag on table adjacent from microwave on cook line.
  • Interior surfaces of the microwave, food contact surfaces, observed to have old food residue and was not clean to sight and touch.
  • Food facility is using an approved non-public water system, but does not have current laboratory testing results for water potability. Facility has not had water tested since Oct 2020 due to unpaid lab bills.
  • Ceiling is leaking water in The Stable Restaurant, and is in need of repair.
  • Observed 5-10 rodent droppings at the corner between 3 bay sink and dish machine.
  • Observed 50-100 rodent droppings on floor of dry storage room.
