Raw animal juices observed pooling in cooler; Smokey Bones in Montomery Mall slapped with 19 violations following complaint to Health Department

The Montgomery County Department of Health and Human Services Office of Public Health (MCOPH) conducted an unannounced retail food inspection on January 18, 2020 following a complaint received by the Health Department. As a result of that inspection, and due to the severity of the specific violations the Smokey Bones in Montomery Mal was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 19 violations were found.

The Health Department said, “Facility has been scheduled for a re-inspection on or after 1/31/2020. Should facility fail to corrected and maintain all violations facility will be scheduled for an administrative conference and an additional re-inspection. Facility will be required to remit a re-inspection fee of $330.00”

The inspector made the following comments in support of the violations found during the inspection:

  • Interior of microwaves unclean.

  • Bag of BBQ glaze observed in dry storage area ruptured in cardboard case with leaking contents. Discarded.

  • Facility observed with 2 gallons of expired whole milk in bar refrigerator. Expired on 1/12/2020. Discarded.

  • Chlorine sanitizer in ware wash machine observed testing off scale above 200 ppm. Facility must cl concentration to be between 50-100ppm.

  • Food items not elevated off ground level in walk in refrigerator.

  • Shelving under prep table in smoker area broken and being held in place by a stainless steel container. Repair.

  • Food labels stuck onto food storage containers not fully removed after washing.

  • Floor in walk in refrigerator observed with unsealed gaps. Floor must be repaired to a cleanable, non porous surface and should have no cracks or gaps that food or liquids can leak under floor. EHS will discuss with supervisor tie frame that MCOPH will grant for repairs and inform facility within 48 hours of inspection.

  • Rubber handles to tongs at grill observed dried out and cracking. Replace.

  • What appeared to be dried brown staining on floor under right side smokers. Facility must clean and sanitize area.

  • Ledges of speed rack containing clean squeeze bottles in smoker area observed with dried on food debris. clean

  • Raw animal juices observed pooling on floor of walk in refrigerator. EHS instructed top mop and sanitize area at time of inspection.

  • Excessive amount of grease and food debris on top of drawer refrigerator under grill area. Clean and sanitize.

  • Walls and shelving surrounding grill observed with built up grease and debris. Clean.

  • Excessive amount of grease and debris observed in crevice of fryer stacks. EHS contacted Twp fire marshal at time of inspection.

  • Walls on interior of trash chute in wait staff prep area unclean.

  • Floors at bar observed with excessive accumulation. Clean.

  • Drain lines lacking on soda guns at bar.

  • Floor in walk in keg refrigerator with buckling floor panels with gaps. Repair to make cleanable and sealed so that liquids cannot leak into floor. EHS will discuss with supervisor time frame that MCOPH will grant for repairs and inform facility within 48 hours of inspection.
