The Bucks County Department of Health conducted an unannounced retail food inspection on January 13, 2020. As a result of that inspection, and due to the severity of the specific violations the Hong Kong Gourmet in Rochboro was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 4 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • A sheet pan of cooked chicken was observed cooling by the exit door with the door propped open in the kitchen. Internal temperature 99F to 111F. Time/temperature control for safety food (TCS) products must cool from 135F to 70F within 2 hours and from 70F to 41F with 4 hours (Total 6 hrs). TCS food products must be placed in refrigeration by a temperature of 135F to achieve these time/temperature requirements. Do not prop the exit door as they may lead to contamination of food products. CFSM reheated chicken to > 165F during the inspection. He was actively prepping sweet and sour chicken.  Corrected On-Site.  New Violation.
  • The solution in the wet wiping cloths buckets exceeded 200 ppm Chlorine. The required concentration is 50 ppm to 100 ppm chlorine. Employee discarded solution during the inspection.  Corrected On-Site.  New Violation.  
  • The speed rack and fryers along the cook line are unclean with accumulated grease and food debris. Degrease, clean and maintain in a sanitary manner.  New Violation. To be Corrected By: 01/13/2020
  • The floor below the wok station and fryers contain excessive grease, grime and food debris. Pull out equipment, degrease, clean and maintain.  New Violation. To be Corrected By: 01/15/2020
