The Chester County Health Department conducted an unannounced retail food inspection on November 18, 2019. As a result of that inspection, and due to the severity of the specific violations the Sync Restaurant at the Exton Square Mall was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 11 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Remove the “wash” and “sanitize” stickers from the sink bays an the ware washing is being conducted in reverse direction.
  • In bistro, large bain marie was observed with an ambient air temperature of 60F, rather than 41F or below. Foods in this unit were observed at proper temperatures in ice baths at time of inspection. Unit must be repaired to maintain air and food at 41F and below. Once unit is repaired, discontinue use of ice baths and foods must be mechanically refrigerated.
  • In Bistro, employee observed slicing tomatoes and heads of lettuce without washing first. Wash or discard these food items. Ensure all produce is being washed prior to preparation.
  • Provide chlorine test strips at all dishwashers.
  • Clean & sanitize the table-mounted can opener.
  • Repair leak from faucet of the 2-bay prep sink in the main kitchen.
  • Ensure all spray bottles are labeled with their contents.
  • In Bistro, employee observed cutting strawberries with bare-hands. To prevent contamination, staff must use gloves/utensils in order to prevent bare hand contact with ready to eat foods.
  • In the customer self-service refrigerator of the Bistro, prepackaged jarred foods (i.e. salads) are not labeled properly with the name of product, ingredient/sub-ingredients, net weight, producer name/contact info, and/or declared allergens. Provide proper labels. Removed jarred items from self-service refrigerator until proper labels are provided.
  • Clean the soiled filters within the hoods of the main kitchen.
  • Beveled base coving must be provided at all floor/wall junctures within the interior service side of the bar.
  • Replace burnt-out light bulbs in the hoods.
  • Clean the floor in the bar area.
