Stroudsburg Borough conducted an unannounced retail food inspection on 8/14/2020. As a result of that inspection, and due to the severity of the specific violations The Charcuterie was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 9 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Ventilation hood above grill is missing 2 filter panels. Obtain proper fitting panels and replace the missing panels ASAP.
  • Grease trap last cleaned 7/01/20. PIC indicated that grease trap is cleaned every 6 months which is not adequate. Grease trap is to be inspected at least monthly and cleaned as needed but not less than bi-monthly.
  • Toilet rooms do not have a self-closing door.
  • There is no signage in the restroom directing employees to wash hands before returning to work.
  • Food facility inspection indicates evidence of rodents/insect activity in dry storage area due to presence of rodent feces, facility does not have a pest control program. RIP directed to contact pest control contractor and take recommended steps to control rodents.
  • The handwash sink in the kitchen was blocked and not accessible at all times for employee use.
  • Floor behind cook line has an accumulation of grease. Address this ASAP and maintain cleaning frequency as needed.
  • Floor in rear of kitchen is made of plywood and is not a smooth, easily cleanable surface. Also, a soft spot exists in floor in front of area covered by plywood. floor covering over soft spot is cracked and not smooth, easily cleanable.
  • Soap was not available at the handwash sink in the kitchen.
  • Paper towel dispenser empty at the handwash sink in the kitchen.
  • No sign or poster posted at the handwash sink in the kitchen to remind food employees to wash their hands.
