The Montgomery County Department of Health and Human Services Office of Public Health (MCOPH) conducted an unannounced retail food inspection on January 6, 2020. As a result of that inspection, and due to the severity of the specific violations the Umai Japanese Restaurant was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 12 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • (4 times repeat violation) Open employee beverages observed on sushi prep counter and in refrigeration units amongst food. Failure to correct and maintain multiple repeat violations may lead to legal action.
  • Employee observed washing hands in prep sink without soap. Facility instructed on proper hand washing procedures during inspection.
  • Raw shell eggs and raw ground beef stored above ready-to-eat foods in walk-in refrigerator. Facility relocated items during inspection.
  • (2 times repeat violation) Chlorine sanitizer bucket at sushi prep area observed above an approved concentration – 200ppm. Facility diluted bucket to an approved level during inspection. Failure to correct and maintain multiple repeat violations may lead to legal action.

  • (4 times repeat violation)Prepared and opened TCS ready to eat foods including fish served raw for sushi held in facility longer than 24 hours missing required discard date marking not to exceed 7 days from the prep/open date. Date marking regulations were emailed to facility during inspection. Failure to correct and maintain multiple repeat violations may result in further legal action or citation.
  • Cut lettuce stored in water in walk-in refrigerator.
  • (4 times repeat violation) Spoons stored in stagnant room temperature water at sushi station. Failure to correct and maintain multiple repeat violations may result in further legal action or citation.
  • (4 times repeat violation) Tongs stored on oven door handle in kitchen. Failure to correct and maintain multiple repeat violations may result in further legal action or citation.
  • Original shipping film observed on ice machine and sushi prep sink. Remove film.
  • Facility observed lining drying rack with absorbent cloth. Facility removed cloth during inspection.
  • Facility observed lining equipment with foil at cook’s line.
  • Facility observed not hanging or inverting mops to dry following use.
