The City of Allentown conducted an unannounced retail food inspection on 7/23/2020. As a result of that inspection, and due to the severity of the specific violations Wally’s Deli was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 3 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- Observed wet wiping cloths in sandwich prep area, being stored in sanitizer solution that did not have proper Cl concentration. Refill buckets and change bleach solution on a regular basis.
- The ice machine has a build up of slime and mold on the splash plate of the unit. Empty the unit, wash, rinse, and sanitize the entire inner ice bin, before allowing ice to be produced.
- Observed cardboard being utilized as a floor covering in the walk in refrigerator. Remove and replace with a non porous material.
