We knew about roaches for months says manager to Health Department during inspection at Signature Pizza in Parkesburg

The Chester County Health Department conducted an unannounced retail food inspection on January 6, 2020. As a result of that inspection, and due to the severity of the specific violations the Signature Pizza was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 7 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Observed a roach on the pizza prep table. Pest Control must be done immediately.
  • The person in charge acknowledge a roach problem has been present in the facility for several months but no pest control operator was called. When asked how often the slicer was taken apart and clean – he stated every few days. Pests must be eliminated from the facility by a licensed pest control operator. The slicer must be cleaned and sanitized after every use.
  • Foods are not being date marked. Any food that will not be used within 24 hours must be date marked. This includes sliced lunch meat.
  • The following areas must be cleaned: 1. Refrigeration door gaskets 2. Interior of deep fryer cabinets 3. Walk in interior walls – moldy 4. Shelving – above slicer and near dishwasher 5. Wall and floor behind ice machine 6. Under Grill 7. All floor/wall junctures – sweep and mop all floors 8. Interior of cabinets under beverage station
  • Observed a live roach on the pizza prep table. Several dead roaches were observed in the cabinets under the soda machine. No certified pest control operator has been treating the facility for months though staff acknowledge they’ve been seeing roaches. You are not permitted to do your own pest control. You must hire a certified pest control operator to treat this facility tomorrow morning. Ensure they leave a report onsite that states what they did, what they treated for, and treated with.
  • Prep bain marie: Air temp 55F. Chicken, steak and cheeses in this unit has an internal temp of 55F. All were discarded. Do not store foods in this unit until it maintains food at 41F or less.
  • Walk in refrigerator: Meatballs, raw chicken wings, lunch meat and spaghetti sauce in the walk in had an internal temperature of 47F. Air temp in the unit was 46F. Discard all foods in the walk in with exception of whole produce. Walk in must be repaired so that it maintains foods at 41F or less at all times.
  • Slicer was not be cleaned after each use. It was observed with a heavy food debris build up. Slicer was taken apart and cleaned while inspector was onsite. Ensure all staff know how often to clean the slicer.
