The Chester County Health Department conducted a follow-up retail food inspection on 2/20/2020 after failing an inspection on 2/5/21 with 12 violations. As a result of that inspection, and due to the severity of the specific violations the White Manor Country Club was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 7 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- Food facility packaging foods using reduced oxygen packaging(ROP)/vacuum sealing without the required written procedures and HACCP plan. Discontinue this activity and remove all ROP equipment. If you wish to ROP, submit HACCP plan for review & approval.
- Clean the following: * hand wash sink by hood in kitchen * exterior of dishwasher in kitchen * exterior of fryers * exterior of bulk dry ingredient storage containers
- Clean floors throughout kitchen, especially under equipment.
- Ceiling in basement dry storage room is damaged. Repair and repaint ceiling.
- There is no Chester County Certified Food Manager. Complete a Department-approved food safety course, county CFM application process, and post county CFM certificate in public view.
- In refrigerators, some potentially hazardous foods (PHF) such as short ribs, produce, cauliflower purée, and other prepared foods were found spoiled and/or with expired dating. Discard these foods all other unwholesome foods located throughout the entire food service area. Routinely check foods for wholesomeness, quality and current dating.
- Hoods are “red-tagged” for deficiencies. Make required repairs and obtain compliant hood tags.
- Remove the following residential-style equipment as only commercially-listed equipment is approved: * Cuisinart waffle maker * vacuum sealer
- Broken/cracked parts observed on the deli slicer. Replace all damaged parts. Do not use the unit until it is repaired and cleaned.
- In the bars, the chlorine sanitizer residual detected in the final sanitizer rinse cycle of the glass washers was 0 ppm, rather than 50-100 ppm as required. Do not use units until both are serviced to provide 50-100ppm chlorine. Routinely test units with chlorine test strips to ensure proper sanitizer concentration.
